These poblano peppers are stuffed with Mexican Rice a topped with a little Chili. A perfect dish for kids who like spicy foods. And the best part is that they look like elf shoes!!!! :)
Ingredients
2 poblano peppers
Leftover chili
Leftover Mexican rice
1 tomato
Directions
Wash poblano peppers and discard the inside of peppers. Blanche peppers for 5 minutes. Let them cool down. Stuff peppers with leftover mexican rice. Bake at 375 for 10-15 minutes and top with leftover chili.
