Creamy Potato Soup

Serves: 1
Time: 30 minutes

This creamy potato soup is one of my favorite comfort foods. 

Ingredients
1T Extra Virgin Olive Oil
1t Sea Salt
3 small Idaho Potatoes (peeled and diced)
1 small yellow onion
1 garlic clove (minced)
1 cup soy milk/almond/rice milk (I used almond milk)
Pepper to taste

Directions
Wash, peel and dice potatoes. Boil them until tender. Sauté garlic, onion, salt and pepper with olive oil in separate pot. Drain potatoes. Add potatoes to garlic and onions.  Add soymilk and mash with a mashing tool until desired thickness.
Serve with fresh chives, vegan sour cream or dill. (I used dill)
