The only veggie patty I like is the brand Gardenburger, which I used here. It tastes really good and i like that it's doesn't have a faux meat texture. I stock up on the Veggie Melody.<br />

I heated the patty on the stove. The toppings are cucumbers, tomatoes, lettuce, onions and pickles. The organic sourdough bread is toasted and smothered with vegenaise and organic stone ground mustard. Made in less than 15 minutes. Ingredients</div>

1T Extra Virgin Olive Oil</div>

1t Sea Salt</div>
<div class="MsoNormal">
3 small Idaho Potatoes (peeled and diced)</div>

1 small yellow onion</div>
<div class="MsoNormal">
1 garlic clove (minced)</div>

1 cup soy milk/almond/rice milk (I used almond milk)</div>

Pepper to taste</div>

Directions</div>

Wash, peel and dice potatoes. Boil them until tender. Sauté
garlic, onion, salt and pepper with olive oil in separate pot. Drain potatoes.

These poblano peppers are stuffed with Mexican Rice a topped with a little Chili. A perfect dish for kids who like spicy foods. And the best part is that they look like elf shoes!!!! :)<br />

Leftover Mexican rice<br />

Directions<br />
Wash poblano peppers and discard the inside of peppers. Blanche peppers for 5 minutes. Let them cool down. Stuff peppers with leftover mexican rice. Ingredients<br />
1 Can Stewed Tomatoes<br />
1 Onion cut into bite size pieces<br />
1 Cucumber cut into bite size pieces<br />
Carrots sliced<br />
(optional cauliflower)<br />
Olive oil<br />
Ginger garlic paste<br />
Curry<br />
Thyme<br />
Chili powder<br />
Tumeric<br />

Directions<br />
In skillet, heat 2 Tbs olive oil saute onion and ginger garlic paste 1-2 minutes. Add cucumber, carrots, and spices: 1 Tbs Curry, 1-2 tsp Tumeric, 1/4 tsp Chili powder, 1/2 tsp Thyme, salt and pepper to taste. These may be increased as desired in particular, the chili powder.<br />

Saute above ingredients for 2-3 minutes. Now add stewed tomatoes and water to make a broth-simmer 20-30 minutes until vegetables are desired tenderness. <br />
